About Us
Pharmacist O.K. Grettenberger, founded LorAnn Oils in 1962 and named the company in honor of his wife, Laura, and their only daughter, Ann. Originally, LorAnn Oils bottled and distributed about 8 to 10 core essential oils such as peppermint and clove and distribution was limited to pharmacies. Over the years, the business has expanded its product offerings and we now sell to a wide variety of retailers, manufacturers, health practitioners and home consumers. Ammonium carbonate is a product of exceptionally high quality and should not be confused with ammonium bicarbonate, which has a lower Ammonia content. Ammonium carbonate is a White crystalline powder which yields a strong ammoniac odor. It decomposes into Ammonia, carbon dioxide and water At elevated Temperatures. This unique property of complete decomposition into gaseous products at temperatures above 59oc is one of the most important features of this product. Decomposition occurs slowly when ammonium carbonate is opened to the atmosphere, but increases significantly when exposed to higher temperatures normally used in the baking process. Ammonium carbonate can be dissolved in water At room temperature, which is a convenient way to add to dough for even distribution.

One bonus is that no one eats the raw dough--so you get to have ALL the cookies baked. Another bonus is that it cleans your oven at the same time! (Kidding!), but I will warn you, DO NOT OPEN that oven door to check on them--the fumes will definitely burn your corneas off. If it has a window in the door, use that. And besides, they cook for such a short period of time, I think you can hold back the anticipation for the 6 minutes they are in the oven.
The dough should be flavored (anise or lemon is best), and they must be frosted--either with a buttercream or if you want to get nice and fancy, a royal icing. The dough isn't very sweet, so it gets it sweetness from the frosting.

Also glad this is a fairly small container since I don’t use baking ammonia for any other recipes. But also FYI to anyone who’s never used it before, baking ammonia does evaporate over time, so buying a large container thinking “this will last me forever” is not something you want to do.
The smell of this baker's ammonia will knock you back, so don't be figuring you'll take a sniff and thinking it can't be that bad. IT'S THAT BAD!!! Even if you have this 12 to 18 inches from your nose when you open it, you will notice the acrid smell. Wowza!!! It's unpleasant. You'll only do the "sniff test" once and you'll learn your lesson. You'll be able to smell it somewhat in the raw dough, and as it bakes, but the smell will dissipate. The product will also evaporate over time, even inside the little jar with the lid on tight.
